Recapping Our Videos- 3x Chopped Champion Turns King Crab Gourmet

Welcome to another video recap, where I share tips, and secret recipes so YOU can become a chef from home! This week I collaborated with chef Andre Fowles in NYC to turn a $500 King Crab Gourmet.

<King Crab Turned Gourmet>

This was a 10lb King Crab!

Today we’re working with chef Andre Fowles. He is an award winning Jamaican born Chef who learned the passion of cooking from his grandmother as a young boy. This experience inspired him to pursue a career as a professional Chef. After graduating from the esteemed Culinary Institute of America, he came on to the cooking scene quickly and impressively by becoming a champion of Food Network’s “Chopped” three times. Chef Andre has also been featured in Food & Wine, Bon Appétit, the NY Times and Eater.

Dish #1: Roti King Crab Tacos

  1. Humanely dispatch the king crab and boil it in a pot of water, chopped onions, scallions, thyme, garlic, and scotch bonnets for 6-10 minutes.

  2. Cut the king crab in half, and using a scissor, cut the shell of the legs to expose the meat.

  3. Make roti by mixing flour, salt, sugar, baking powder, water, and little bit of oil. Rest for 15-20 minutes.

  4. Make curry aioli by blending garlic, scallions, onions, fresh thyme, scotch bonnet, and all spice. Take the sofrito and fry on a pan. Add curry powder and salt. Mix with mayo and lime zest to finish it.

  5. Create herb salad with cilantro, pickled red onions (boil water, vinegar, sugar, and thyme. Let sliced red onions boil in the mixture for 3 minutes), salt, olive oil, and lime juice.

  6. Toast the roti until nice and golden.

  7. Combine flour, cornstarch, salt, beer, and little bit of club soda for wet batter.

  8. Fry in the fryer at 350 Fahrenheit for 5 minutes.

  9. Assemble: Roti, fried crab leg, herb salad, and curry aioli.

  10. Enjoy!

Dish #2: King Crab With Jerk Lime Butter

  1. To melted butter add jerk seasoning, fresh herb of your choice, smoked paprika, salt, a generous amount of lime zest, and the juices from the crab head.

  2. Add the butter to the meat of your choice. Make sure to place into the shell, and on top of the meat.

  3. Sprinkle some cilantro on top, and broil at the highest oven setting until the butter melts all the way through.

  4. Enjoy!
