Recapping Viral Videos-Master Chocolatier Makes Chocolate Chip Cookie
Welcome to another video recap, where I share tips, and secret recipes so YOU can become a chef from home! This week I collaborated with MASTER pastry chef Jacques Torres to create an iconic dessert: chocolate chip cookies.

Chef Jacques Torres is a LEGENDARY pastry chef and chocolatier from France, who also appears as a head judge on Netflix’s Nailed it! His love for pastries and chocolate started young, as he began his apprenticeship at fifteen in a local shop. In 1980, he began working for Jacques Maximin, a two-star Michelin chef. He then moved to the US where he worked as an executive pastry chef, dean of pastry arts, and owner of one of the most successful chocolate factories in America. In his impressive resume, chef Jacques won multiple awards including James Beard Award for Pastry Chef of the Year, Meilleur Ouvrier de France (A French competition for craftsmanship held every four years. Kind of like a world cup of skills!), and much more that I did not list.
<Recipe>
Ingredients:
2 cups minus 2 tablespoons (8 ½ ounces) cake flour
1 ⅔ cups (8 ½ ounces) bread flour
1 ¼ teaspoons baking soda
1 ½ teaspoons baking powder
1 ½ teaspoons coarse salt
2 ½ sticks (1 ¼ cups) unsalted butter, softened
1 ¼ cups (10 ounces) light brown sugar
1 cup plus 2 tablespoons (8 ounces) granulated sugar
2 large eggs
2 teaspoons natural vanilla extract
1 ¼ pounds bittersweet chocolate discs or féves, at least 60 percent cacao content
Flaky sea salt, like Maldon
Mix cold butter with sugar, brown sugar, eggs, vanilla extract, bread flour, cake flour, salt, and baking powder.
Add large chocolate chips. Do not over mix in the mixer as the chips will become too incorporated.
Mix the dough by hand into a large sausage like structure, then wrap it in plastic wrap.
Into the freezer to set for about 5-10 minutes.
After the dough is set (not frozen), cut into slices, form into balls and spread them onto the tray pan.
Preheat the oven to 350 Fahrenheit and bake for 15-20 minutes.
Cool until it reaches the consistency you like.
Dunk you cookies in wine and enjoy!
Secrets to the BEST Chocolate Chip Cookie:
#1: Mix bread flour and cake flour for a perfect blend of crispy edges and soft gooey inside.
#2: Butter has to be at least 82-84% fat to create a savory flavor and proper texture.
#3: Bake your cookies the next day. The reasoning behind it is that ingredients will have more time to incorporate together, resulting in much more flavorful bites.
